Apple Gingerbread Skillet Cookie

Ingredients
- 2 ¼ cup all-purpose flour
- 1teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoons ground ginger
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground cloves
- 1 stick of butter at room temp
- 1 cup granulated sugar
- 1 egg
- 1 cup grated Autumn Glory® apple
- Powdered sugar for dusting
Directions
- Preheat oven to 375°F
- Cream together butter and sugar for 5 minutes until fluffy
- Add in egg and continue to mix another two minutes
- In a large bowl combine all dry ingredients and then slowly incorporate into the wet ones
- Once combined, fold in the grated apples
- Grease an oven proof skillet and pour the batter into an even layer. Bake for 25-30 minutes until edges are golden but the center of the skillet cookie is still soft.
- Let cool for 10 minutes and then sprinkle with powdered sugar liberally
- Serve with ice cream if desired

Autumn Glory Spinach Salad
with vegan “honey” mustard dressing
Try this delicious and nutritious salad recipe! It’s topped with a vegan “honey” mustard that will have you wowed along with the sweet flavors of fall found in Autumn Glory apples.
Ingredients:
For the dressing:
- ½ tablespoon spicy brown mustard
- 1 tablespoon brown rice syrup
- 2 tablespoons carrot juice
- ½ tablespoon apple cider vinegar
- 1 tablespoon tahini
- ⅛ teaspoon sea salt
For the salad:
- Spinach
- Autumn Glory apple slices
- Crispy chickpeas
- Red onion, chopped
- Dried cherries
- Quinoa
- Feta or vegan feta (optional)
Directions:
- Blend all dressing ingredients together and then build salad, topping with as much dressing as desired!

Roasted Sweet Potatoes and Autumn Glory Apples
Yield: 4 servings
Ingredients
- 2 Autumn Glory® apples, peeled, cored, and cut into sixteen wedges each
- 2 medium sweet potatoes, peeled and cut into wedges (similar in size to the apples)
- 1 red onion, peeled with ends removed and cut into wedges
- ¼ c. extra virgin olive oil
- ¼ c. fresh sage, minced
- ½ tsp. cardamom
- 1½ tsp. kosher salt
- fresh ground pepper to taste
Directions:
- Preheat oven to 400º.
- Toss all of the ingredients in a large bowl and then spread evenly on a baking sheet lined with parchment paper to prevent sticking.
- Roast in the oven for one hour, until the sweet potatoes are very tender and the apples are cooked but still slightly firm.
- Serve warm.
