Greek Independence Day Recipes

Greek Independence Day is March 25th! We have some delicious recipes for you to try, so join us in the celebration with these awesome dishes!

Greek Potato Wedge and Feta Cheese

Ingredients:

  • 2 potatoes, cut into wedges, or 1 pkg of frozen wedge fries
  • 2 oz. feta cheese
  • 1 tbsp Greek seasoning
  • 1 tbsp lemon zest
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp of chopped fresh mint (optional)

Directions:

  1. Preheat oven to 400 degrees F.
  2. Spread potato wedges on a baking sheet, drizzle with olive oil, and combine to make sure all wedges are coated evenly.
  3. In a small bowl, combine the Greek seasoning, salt, pepper, and lemon zest.
  4. Sprinkle the seasoning mix over the wedges.
  5. Bake for about 20 minutes, or until tender when pierced with a fork. 
  6. Remove from oven, crumble the feta cheese and sprinkle fresh mint (optional) over the wedges. Serve warm!
French Fries and Feta Cheese

 

Greek Tzatziki Sauce

Ingredients:

  • 1 (32 oz) container plain low-fat yogurt
  • 1/2 English cucumber with peel, grated
  • 1 clove garlic
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra-virgin olive oil
  • 2 tsp grated lemon zest
  • 3 tbsp chopped fresh dill
  • 1 tbsp salt, or to taste
  • 1 tbsp freshly ground black pepper

Directions:

  1. In a medium sized bowl, combine the yogurt, cucumber, garlic, dill, olive oil, lemon juice, lemon zest, salt, and pepper.
  2. Serve as a dip (Try with the above Greek Potato Wedge recipe!)
Tzatziki

 

Market Basket Gyro

Ingredients:

  • 1 lb. boneless skinless chicken breast, cut into strips
  • 1/4 cup and 1 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, finely chopped
  • 1 1/2 tsp kosher salt
  • 1 tsp dried oregano
  • 1 tsp lemon pepper
  • 2 red onions
  • 1 cup of Tzatziki dip (see above recipe)
  • 1 pkg. pita or naan bread

Directions:

  1. Combine the oil, lemon juice, garlic, salt, oregano, and lemon pepper in a bowl to use as a marinade.
  2. Prepare a heavy-duty resealable plastic bag, and add the chicken, then pour the marinade mix into the bag. Squeeze out any air, and massage.
  3. Place the bag in the refrigerator for at least 1.5 hours, turning occasionally.
  4. Prepare the Tzatziki Dip from the above recipe.
  5. Chop and dice the red onions, set aside.
  6. Heat 1 tbsp olive oil in a non-stick skillet on medium-high. Add the chicken to the pan. Cook until golden brown on each side, for about 5 minutes per side.
  7. Warm up the pita bread. Add the chicken, Tzatziki dip, red onions, and wrap or fold the pita bread. Enjoy!
