Glazed Dumpling Squash Recipe

Ingredients

  • Vegetable oil
  • 3 squashes (about 1 1/2 pounds each)
  • Coarse salt and ground pepper
  • 1/2 cup packed dark-brown sugar

Directions

  1. Preheat oven to 400 degrees F
  2. Line two rimmed baking sheets with aluminum foil and brush with vegetable oil.
  3. Cut the Dumpling Squashes in half, discard the seeds, and slice them into 1-inch-thick crescents
  4. Lay the squash pieces on baking sheets. Season with salt and pepper, then sprinkle squashes evenly with half the sugar. Roast until the sugar has melted (5 min).
  5. Remove baking sheets from the oven. Turn over pieces. Season with salt and pepper; sprinkle evenly with remaining sugar. Roast until tender (20 min).
