Orange Chicken
Ingredients:
- 1 large boneless chicken breast or 3-4 boneless chicken thighs, cut into bite size cubes or strips
- 1 chopped onions
- 1 to 2 tbs minced garlic (adjusted to your liking)
- chopped scallions (for garnish)
- salt and pepper, to taste
- 1/2 orange
- 1-2 tbs Soysauce
- Panda Express Orange Sauce
- 2 eggs
- all purpose flour
- cooking oil
Directions:
- Prep the chicken by cutting it down to bite size cubes or strips, transfer into a large bowl.
- In a separate medium bowl, add the 2 eggs, salt and pepper then whisk until smooth.
- Add the eggs into the chicken, and mix until well coated.
- Prepare a large plate with all purpose flour. Dip individual pieces of chicken into the flour, ensuring that all sides are well coated.
- Heat the oil in a skillet over medium heat. When hot, add the chicken pieces into the oil to fry. Cook in batches.
- Cook until golden brown, and set aside on to a plate with paper towel (to catch excess oil).
- In a clean skillet, add a small amount of oil and heat over medium heat. Add the chopped onions and minced garlic, stirring constantly to prevent burns.
- Transfer the cooked chicken into the new skillet with the onions and garlic. Stir well.
- Squeeze the half orange into the skillet, and then add soysauce. Stir.
- Add the Panda Express Orange Sauce, enough to coat all pieces of chicken with the sauce, and stir well.
- Once well heated, transfer the contents onto a plate, and then garnish with scallions.
Firecracker Chicken Breast
Ingredients:
- 1/2 cup + 1 tablespoon vegetable oil, divided
- 1 lb. boneless, skinless chicken breasts, cut thinly into 1 in squares
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 2 large eggs, beaten
- 2 garlic cloves, minced
- 1 red bell pepper, chopped into 1 inch cubes
- 1/4 white onion, sliced into 1 inch thick wedges
- 2 cups pineapple, cubed into 1 inch cubes
- 1/2 cup Panda Express Sweet chili sauce
- 3 tablespoons scallions, chopped for garnish
- Sesame seeds, for garnish
Directions:
- Heat 1/2 cup of vegetable oil in a skillet over medium high heat.
- In a large bowl, add the chicken and cornstarch, mix until fully covered.
- Beat the 2 eggs until smooth in a separate bowl, and prepare a plate of flour.
- Dip each piece of the chicken into the egg and transfer to the plate of flour, making sure that all sides are covered. Work in batches.
- Add the chicken into the skillet in batches. Cook until golden brown and crispy, flipping the chicken over after a minute or two on each side.
- Remove from the skillet, and onto a plate with paper towel (to absorb excess oil)
- Add the remaining table spoon of oil into the skillet, and heat over medium high heat.
- Add the bell pepper, onion, garlic, and pineapple, and cook for 2 to 3 minutes.
- Add the chicken back into the skillet, and then add in the sweet chili sauce, then stir to combine.
- Service Immediately whole warm. Garnish with scallions and sesame feeds.

Longevity Noodles
Ingredients:
- Water
- 1 teaspoon salt (to taste)
- 3 nests Blue Dragon Cantonese Egg Noodles (cook according to package instructions)
- 1/4 cup chicken stock or vegetable stock
- 1 tablespoon light soy sauce
- ½ tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon cooking oil
- 2 garlic cloves, minced
- 1 cup mushrooms, sliced (you can use button mushrooms or shiitake mushrooms)
- 2 cups julienned carrots
- 3 sprigs green onions, sliced
Directions:
- Bring water to a boil in a large saucepan over high. Add salt to water and cook noodles according to instructions on the package, until just under al dente, about 2 to 3 minutes. Drain noodles thoroughly in a colander, and rinse under cold water to stop the cooking process. Drain, lifting noodles to separate and dry the strands. Set aside.
- Stir together stock, soy sauce, oyster sauce, and sesame oil in a small bowl. Set aside.
- Heat oil in a wok over high until shimmering and fragrant; swirl to coat the wok. Add garlic; cook, stirring constantly, until it starts to brown around the edges, about 10 seconds. Add mushrooms and cook, stirring constantly, about 30 to 45 seconds. The mushrooms will soak up the oil, so add a bit more as needed if they look dry. Add carrots; cook, stirring constantly, about 1 minute.
- Stir sauce and add to mixture in wok; bring to a boil over high. Add noodles to wok; cook, stirring constantly, until noodles absorb the sauce, about 2 minutes. Season with additional soy sauce to taste. Add the green onions and transfer the noodles to a platter. Serve immediately.
Shrimp Spring Rolls
- ½ cup (65g) Rice Noodles, cooked
- 4 Blue Dragon Spring Roll Wrappers
- 12 mint leaves
- 12 cilantro leaves
- 4 Boston Bibb Lettuce leaves
- ½ cup cucumbers, matchstick-cut
- ¼ cup carrots, matchstick-cut
- 12 pre-cooked shrimp, tails removed
- Blue Dragon Thai Sweet Chili Sauce for dipping
Directions:
- Cook the rice noodles according to package directions; set aside.
- Using one at a time, place wrapper into hot water until it is soft and pliable (about 5-10 seconds).
- Remove wrapper from water and blot on a damp tea towel.
- Arrange lettuce, noodles, carrot, cucumber, and 3 mint leaves in the middle of the wrapper. Above that, place 3 cilantro leaves and 3 shrimp in a row.
- Fold wrapper around lettuce and noodles, then continue rolling to cover shrimp. Fold in the sides of the wrapper and then continue to roll upwards to form a log shape.
- Serve with a side of Blue Dragon Thai Sweet Chili Sauce for dipping.
