Ingredients:
- 1 Plain sheet cake from MB Bakery (Please ask at the counter!)
- 1-2 pints of blueberries
- 2 lbs of strawberries (stem removed and cut in halves, top-down)
- 1 cont. of Vanilla Frosting or Whipped cream**, divided
**If using Whipped Cream:
- 1 cup heavy cream
- 2 tbsp of confectioners' sugar or granulated sugar
- 1/2 tsp pure vanilla extract
Fruit Glaze:
- 1-2 tbsp Apricot preserves (or apple, red currant, or fruit of your choice)
Extra Tools:
- Piping bags (2)
- Star tip (Small, Large)
- Hand mixer or stand mixer
- Pastry brush
Directions:
- Prep the plain sheet cake on a plate.
- Prepare the fruits by washing them. Remove stems from the strawberries, cutting them in halves, top-down.
- Prepare the fruit glaze by heating a couple of tablespoons of the apricot preserve (or preserve of your choice) on the stovetop. You may have to add a small amount of water (1/2 to 1 tsp per 1 tbsp of the preserve) to get it loose. Strain out the chunks, if any.
- If using vanilla frosting, mix to loosen.
- If using whipped cream, using a hand mixer or a stand mixer, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium-soft peaks form, for about 3-4 minutes.
- Coat the sheet cake evenly with frosting or whipped cream. Be sure to save some for the stars and stripes!
- Shingle the strawberries (as shown in the picture above) to form the red stripes. Place the blueberries to form the star field. Very lightly glaze the blueberries and strawberries with the prepared glaze, using a pastry brush, careful not to move the fruits around.
- Transfer the remaining frosting or whipped cream into 2 piping bags, one with a small star tip and one with a large star tip.
- Using the smaller tip, pipe the frosting or cream onto the blueberry field to form the stars.
- Using the larger tip, pipe in-between the strawberry stripes.
Pro Tip: Frosting will hold its shape longer when served at a party! So choose based on how long the cake might sit - If you do not want to use frosting or whipped cream for the entire cake, you can use whipped cream for the sheet cake, and then frosting for the stars and stripes.
